Fruit from these 40yr old vines continue to capture the steely and citrus characters. Pale straw green. Fresh limes and citrus blossom in the nose. Established in 1997 by Aussie Duncan Ferguson and Spaniard Susana Fernandez, Cascabel’s mosaic of southern Rhone and Spanish varietals across just 5ha of vineyards is testament to their passion and enthusiasm for creating interesting and sometimes challenging wines. ‘We are the naughty ones at the back of the bus’ explained Susana in relation to their non-conformist style and approach, ‘we don’t want to rely on analysis, we work on experience of the vines and previous vintages’, and from the tasting this personality is stamped on the wines.

Vineyards are tended by hand, spraying is kept to an absolute minimum, risks are taken at harvest to ensure grapes are picked at optimum ripeness (even when all surrounding winemakers are frantically picking) and handling in the winery is kept to a minimum. Producing only 2,500 cases a year, with some vineyards cropping at just 2 t/ha and with a winery up so that all harvest operations can be managed by just one person, this is boutique winemaking at the extreme, creating wines that are the ultimate expression of simply terroir and grape.
